I hope your Easter was a nice one...it was a beautiful day here in Georgia. Lunch with friends and their family and phone calls to mine who live in another town...Thank you Lord Jesus for dying for our sins and thank you that you arose!

The World Famous Breakfast Club

One of the best things I enjoyed on Tybee Island was breakfast at the "World Famous Breakfast Club"! The hostess was rude, the line was long and it was great! You have to wait outside for all your party to get in line before they will let you in...BUT, once you do get in and find a seat in the tiny restaurant....WOW! As a Southerner, I know grits...as a matter of fact, Pine Mountain Speckled Grits are my favorite and I keep them on hand, but the grits there were the best I ever had! No kidding! The friends that were with me had Omelets and said they were outstanding...the Waffle had cinnamon in the batter and was absolutely perfect...crispy on the outside and fluffy and tender in the middle. Needless to say, during my week there, I had to go back again...go to the link and read all about it and if you are ever in Savannah, make the trip to Tybee and go there!
Here's a recipe that I am going to try and see if it can compare to that waffle...I am going to use my sister's ancient vintage waffle maker...I'll let you know how it is.
OLD FASHIONED WAFFLES
Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 4 teaspoons baking powder
- 1 teaspoon cinnamon
- 2 tablespoons white sugar
- 2 eggs, separated
- 1 1/2 cups warm milk
- 1/3 cup butter, melted
- 1 teaspoon vanilla extract
Directions
- In a large bowl, mix together flour, salt, baking powder and sugar; set aside. Preheat waffle iron to desired temperature.
- In a separate bowl, beat the egg yolks. Stir in the milk, butter and vanilla. Pour the milk mixture into the flour mixture; beat until blended. Whip egg whites and gently fold into batter.
- Ladle the batter into a preheated waffle iron. Cook the waffles until golden and crisp. Let the waffle rest a minute on a paper towel...this keeps it from becoming soggy and keeps it crisp.
Makes five waffles...

Tybee Island Trailer Tour
Boy, did we have a great time at River Bend Campground at Tybee Island, Georgia. The Southern Sisters on the fly had a trailer tour to raise money for the historical Tybee Post Theater Restoration. We helped raise $5,000.00. For those of you who might be interested, you can look at trailer pictures on my Facebook page and on the Tybee Island Facebook page. The River Bend Campground also has a Facebook page showing pictures of the campers...as we always say: "we have more fun than anyone!"
