Armadillo Eggs




Armadillo eggs are not eggs, and they are definitely not from Armadillos. They are delicious appetizers, popular in the Southwest, and as far as I'm concerned, everywhere else! There are several different methods of making them, but this is my favorite!

INGREDIENTS:

12 Jalapeno peppers
1 lb. sausage
2 cups baking mix, such as Pioneer Baking Mix
1/2 cup of milk
1- 8 oz. pkg. shredded Sharp Cheddar cheese
1- 8 oz. pkg. cubed Cream cheese as in Philly brand
2 tsp. garlic salt
2 tsp. red pepper flakes (more or less to your taste)

DIRECTIONS:

Preheat oven to 325 degrees. Grease baking sheet. Wearing gloves, cut a slit in each pepper, removing the seeds and pulp. Into a large bowl, add baking mix, shredded Cheddar cheese, garlic salt, pepper flakes, sausage and the 1/2 cup of milk and mix well with your hands. Insert a cube of the Cream cheese into each pepper. Form the sausage mixture around each pepper and place on the baking sheet. Bake about 25 minutes in the preheated oven or until lightly browned. For a change of pace, you could use Monterey Jack cheese, cubed, if you like. This will be a hit at any gathering, I promise!
